Nikos Pouliasis is not from Santorini. However, years ago he fell in love with Santorini and came here to open a restaurant which for years now has been a reference point for the island. At his restaurant you will not taste the Santorinian cuisine, but you will have the chance to try his own special “extravagant” cuisine, where risotto gets married with levanta (lavender) and crawfishes with white chocolate sauce. He deeply cares for the island and continuously expects and dreams of something more for it. He believes that services provided should be equally high as her unique beauty. To him, it is absolutely inconceivable that some people, who do not truly love Santorini, exploit her just to make profit out of her and, thus, do not offer the visitor the essential high level of services. “A lot can be done as long as there is a strategy for organised practice” he says. “Not anyone should be allowed to open a shop if he does not have the knowledge of the specific object. One cannot deceive the visitor forever”.
